Asparagus with Sesame Sauce Dressing

Asparagus Sesame Sauce Dressing *White Sesame Seeds Sake Light Soy Sauce, Salt |
1 Bunch 3 Tablespoons 1/2 Tablespoon 2 teaspoons As desired |
1. Toast the sesame seeds by moving the pan over low heat and slowly toasting. Keep moving the pan so the seeds do not burn. Place toasted seeds in a bowl with a damp cloth under the bowl so it won’t move and grind. Add 1/2 tablespoon sake and light soy sauce. Set aside.
2. Break off the dry end of the stalks from the asparagus. Add a pinch of salt to boiling water and boil asparagus for 30-40 seconds. Dunk them in a bowl of ice water to bring out the color and prevent overcooking. Dry with paper towel.
3. Cut the asparagus into bite-sized pieces. Toss quickly in light soy sauce.
4. Place the asparagus in the bowl and gently mix together with the sesame sauce.
