Sweet Chili Sauce

Ingredients

1. Make syrup of sugar and water by boiling until clear, then remove from the heat. Let cool.

2. Simmer chili peppers in a pot. It is hard to grind them when they are dried, so simmer to soften a bit (for 10 min). Tear apart with your fingers.

3. Slice the garlic and place the sliced garlic in the mortar and smash. Add chili pepper and pound.

4. Add 2/3 cup vinegar and 1/4 cup Thai fish sauce, Add the syrup (made earlier) Mix well.

Vietnamese Style White Fish Fritters

Ingredients (4 servings )

Cod fish

Asparagus

Cilantro leaf

Shiso leaf

Lettuce

Egg

Salt, black pepper,
Flour, oil, mayonnaise

1. Cut the cod into four bite-sized pieces and lightly season with salt and pepper.

2. Cut the cilantro leaves in 1/2 inch lengths. Cut shiso and lettuce into bite size pieces.

3. Prepare a batter by mixing an egg yolk with ¼ cup water in a bowl. Add 1/2 cup of flour. Mix well so that there are no lumps.

4. Whisk the egg white until stiff. Mix into batter bowl. Gently whisk everything together so that the batter is airy.

5. Dip cod and asparagus into batter.

6. Heat oil to 338F. Fry the cod and asparagus until crispy.

7. Spoon sweet chili sauce all over the fritters and vegetables as desired.

 

Simple Deep-fried Spring Rolls

Ingredients (4 servings)

Spring roll wrappers

Chive

Ao-shiso

Bean Sprouts

Ground chicken

Sweet Chili Sauce

Flour, Oil

1. Cut the chives into 6 inch lengths. Tear the Ao-shiso into bite-size pieces. Make the paste for the wrap by mixing flour with water.

2. Place the wrapper diagonally in front of you. Put some bean sprouts and chives in the center. Add some ground chicken on top.

3. Roll up into a skinny roll and put a dab of paste made from flour and water to seal the edge.

4. Fry the spring rolls in the oil about 350°until golden brown.

5. Serve with sweet chili sauce.
