Japanese Pepper Boiled in Sweetened Soy

Ingredients

Japanese Pepper (Boiled)

Sake

Soy Sauce

Tamari Sauce (substitute: Soy sauce 1/2 cup and Mirin 1 tablespoon for Tamari Sauce )

1/4 Cup

1. Bring water to a boil in a medium pot. Add Japanese pepper and boil for 5 minutes. After boiled, immerse in ice water for a minimum of 1 hour (the longer it is soaked, the spicier it will be). 
2. Combine 1/2 cup sake, 1/4 cup soy sauce and ¼ cup tamari sauce in a pot over low heat. Add Japanese pepper and simmer.
3. Remove layer of film that forms as sauce is simmering. Simmer until the sauce is gone.
4. Place on plate and eat with your favorite dish.

* When stored, it will keep for 6 months in refrigerator.


Boiled Seaweed in Sweetened Soy

Ingredients

Konbu (made soft by soaking it in water. Keep water for dashi)

Japanese Pepper Boiled in Sweetened Soy

Dashi Soup (can use from konbu water)

Vinegar

Light Soy Sauce

Mirin

Sake

3/4 lb.

3 tablespoon

2 cups

1/4 cup

1/2 cup

1/2 cup

1 tablespoon


1. Cut the konbu into 1/2 inch squares.
2. Put konbu, 2 cup dashi and 1/4 vinegar into a pot. Cover and boil at low heat for 15 minutes until the konbu is tender.
3. Add 1/2 cup light soy sauce, 1/2 cup mirin, 1 tablespoon sake and 3 tablespoons Japanese Pepper Boiled in Sweetened Soy. Cover and boil at low heat for approximately 30 minutes.
