Broiled (or Grilled) Mackerel with Salt

Ingredients (2 People)

Mackerel (cleaned)

Radish (daikon)

Salt

Shiso Leaf

Vinegar

Sugar

2 pieces

1/2 teaspoon
 

1. Pat the Mackerel dry with paper towel. Sprinkle 1/4 teaspoon salt on the Mackerel.

2. Place on a grill, broil till slightly brown on both sides (about 8-10 minutes). Keep an eye on it to be sure not to overcook.

3. Mix vinegar and sugar. Grate radish and mix with sweet vinegar.

4. Place shiso leaf on a plate and the broiled Mackerel and grated radish on top.

Boiled Rice with Green Peas and Chicken

Ingredients (4 people)

Rice

Green Peas

Carrot

Chicken Thigh

Konbu

Sake

Light Soy Sauce

Salt

2 cups

1/2 cup

1  4" piece

2 tablespoon

1 teaspoon

1/2 teaspoon
 

1. Prepare rice with the konbu in rice cooker. Add 2 tablespoon sake. Let it soak.

2. Cut the carrot and chicken into bite sized pieces. Add the light soy sauce and let soak. Add the peas and mix. Take konbu from rice cooker and cut into small pieces. Mix all together.

3.  Add 1/2 teaspoon salt in rice cooker and mix lightly, toss in ingredients from #2. Mix ingredients and cook. When done, toss the ingredients and serve.
