Bonito (Raw Sashimi) White Wine Whole-grain Mustard Fresh Cream Mayonnaise Green Asparagus Olive Oil |
16 oz 1/4 Cup 1 Tablespoon 2 Tablespoons 1/2 Cup 8 1 Tablespoon |
1. Sprinkle salt and pepper on the bonito and leave it for 10-20 minutes.
2. Heat a tablespoon of olive oil in a pan. Add bonito and cook. When the color turns white, turn over and cook the other side. Leave the middle part rare.
3. Remove the bonito from the pan and set aside. To the pan, add white wine and boil down for a couple minutes over low to medium heat. Add whole-grain mustard and turn off the heat. Add fresh cream and mayonnaise and mix.
4. Slice off the bottom hard part of the asparagus and discard. Cut the asparagus in half. Rinse in water and sprinkle salt (coarse salt is preferred). Boil the bottom half first in salted boiling water and after a minute, add the upper parts of asparagus. After 30-40 seconds, drain the asparagus in a strainer.
5. Place the sliced bonito and green asparagus on a plate and pour the sauce from “3”. Enjoy!
